Crete Menu

One of the main reasons our location in Greece is so outstanding is because of its incredible Cretan food.  Most of the food is grown on the surrounding terraces organically.  There are also fowl, pigs, sheep and goat all reared on the land organically.  All recipes are made from seasonal and local ingredients, mostly organic. (There is even the opportunity to explore the farm and get involved a bit if you want). 

The menu provided on the course has been adapted to follow our wild hunter-gatherer principles (see Wild Eating page for details). We can also provide a personalized menu for vegetarians or those with specific allergies.  See a sample menu below:

Breakfast:  Eggs (from the chickens outside).  Raw cheese (from the goats outside).  Raw local honey and olives.  Fresh orange or lemonade from the surrounding trees.

Lunch:  Massive green salad with aubergine and beetroot grown on the farm.  Lamb in olive oil. 

Dinner:  Pumpkin soup (the pumpkins grown locally are HUGE!).  Wild greens.  Local Cretan prawns. 

Snacks:  Fruit, raw vegetable nibbles with dips.  

Herbal tea is made from a fusion of wild herbs picked from far away places on the Cretan hills (where the animals can’t get to and eat them all!).  It is said that in these place only the gods themselves dare to walk.  And some very agile herb pickers.
